Description
The flatfish, locally known as Kafshak, rests on the ocean floor on its side. The eye that would normally face the seabed has evolved to shift to the upper side, alongside the other eye. Its body is typically brown in color, and both eyes have an upward field of vision of about ۷۰ degrees.
The size of flatfish usually ranges from ۱۲ to 28 cm, though in rare cases individuals as large as ۴.۵ meters have been recorded. This species can be found at depths of up to ۵۵ meters.

Suggested Cooking Methods
Flatfish is considered one of the tastiest fish of southern Iran. Its tender flesh easily absorbs different flavors, and its boneless, flavorful meat makes it perfect for frying or breading (deep-frying). It is also commonly used in traditional dishes such as Tahchin (rice casserole) and Ghalieh Mahi (southern fish stew)
